When it comes to senior living, there are a few factors to consider always. One of the main considerations should be food and the overall dining experience. With that comes the delicate balance of culinary creativity and nutritional precision, the nuanced dance that unfolds within our dining rooms. I am always careful with the amount of salt used in my dishes. I’ve found flavor can be added using herbs, spices, and some form of citrus instead of salt. I always keep the flavor in mind when cooking for my residents. We, as chefs, can make the healthiest dishes on the planet, but if they don’t taste good, no one will order them.
If a health-conscious resident were to ask me to suggest an entrée, it would be a salmon entree with brown rice and asparagus.
This lean protein is a good source of healthy fats. Whole grains keep you satisfied, and a lovely green vegetable tastes good with lemon. I would suggest whole milk, magic cups, heavy cream, and butter for residents needing to gain weight. Consuming these items is an excellent way to add extra calories without much effort.
When dining out, I don’t always consider my nutrition. Healthy snacking is essential. A healthy snack option is hummus and pita or veggies. I like the flavor and how the snack fills without guilt. My one guilty pleasure snack is ice cream.
